4 Quick and Easy Autumn Dinner Recipes

With all of our summerwear all packed away and thoughts of salads and shorts long forgotten, it’s time to think about how to re-stock the fridge for a variety of Autumnal  dinners that will warm us up on the windiest and wettest of days!

So we have taken the time to compile a list of our favourite quick and easy Autumn dinner recipes to ensure you are prepared for those long and hopefully warm evenings in the house.

 

1. Shepherd’s Pie

A true classic among comfort foods – that will also handily serve extra portions that can be chilled or frozen to ensure you always have enough of this staple in your house.

2. Roasted Autumn Vegetables with Lancashire Cheese

This beautifully colourful dish brings all those seasonal veg into one warming delight which works fantastically as either a vegetarian main or a yummy side to your favourite Sunday roast. You could even experiment with different cheeses for that ultimate vegetable dish of future choice.

3. Chicken, Mushroom and Bacon Pie

When those golden leaves start to fall we all start craving a beautifully crispy deep filled pie with some steamed greens on the side and those chunky chips. We chose this flavour because of the tenderness of the chicken that contrasts with the crispiness of the bacon. When combined with the creaminess of the sauce, the whole dish just gives you that ‘ooo’ warmth you were looking for.

4. Moussaka

A traditionally Greek dish that is beautifully made with minced lamb and topped with layers of Aubergine, yoghurt and your favourite cheese, this is the perfect dish to warm you up when those nights draw dark long before you get home from work or school. It’s also simple to make and you can also mix it up with a tasty salad to get those summer vibes back too.
