Healthy but Yummy Breakfast Options

We all know that breakfast is one of the most important meals of the day, giving us the energy to stay alert and aware of what we’re doing, (as well as satisfying the morning hunger of course!) But many breakfasts are pretty bland and unappetizing prompting many to skip breakfast and try and get through until lunchtime.

At URBAN eat we believe breakfast is a must, and to help you find something different and delicious, here are some of our favourites:

Egg Whites with Peppers

Egg whites are healthier than eating the entire egg and are a great morning source of protein. Scramble with a little olive oil and then add some chopped red and green peppers as well as some chilli if you want to spice it up a little. Broccoli, onions and black pepper will also help up the vitamin intake whilst also being very very tasty and being a great source of energy well into the day. If you feel the need for some carbs, serve this on whole-wheat toast.

Fresh fruit salad with granola and yoghurt

We all know that fruit is good for us, but by adding a couple of interesting extras it becomes more like a treat than a chore. Choose your favourite fruits and mix and match according to your mood. Citrus fruits are especially nice with yoghurt as it dulls the acidity. You can also try out different flavours of granola to make it even more interesting. The mixture of textures and flavours is what makes this work, so although you may be sceptical give this a go and you will definitely be converted.

Smoothie

This is the quickest and simplest way to get your five a day as well as not sacrificing flavour at all. You can use just fruit to make a thicker consistency of smoothie or add in some flavoured yoghurt or fruit juices to make it more pourable. Try to avoid cream or ice cream to bulk these out as they instantly rack up your calories.

Bake your own breakfast bars

A great way to avoid additives and preservatives from commercial snack bars are to make your own! This means they can be your personal favourite flavours, more cost effective and also store well in the cake tin for weeks after baking. The only ingredients you need are eggs, sugar, oil, then add in your fruit, nuts and oats and bake for 40 minutes. Enjoy!

1 1/2 cup toasted oats
2/3 cup dried cranberries, chopped
1/4 cup pecans, chopped
1 tablespoon all-purpose flour
