Great Summer Salads – Refreshing, Healthy and Dead Easy!

It’s very easy now the sun is out to get caught up in grabbing any food we can find just so we can go and sit outside in a park or open area and eat our lunch, but while fast food is convenient that doesn’t make it good for us. It’s just as easy – and far more healthy – to have a healthy and, importantly in this weather, refreshing salad for lunch to keep your body well fueled and hydrated.

Salads in the summer are often the best food you can have. They are usually very light so you don’t go back to your hot, sweaty office with that bloated feeling you often have when you’ve had a hot or big lunch.

A lot of salads only take about ten minutes to prepare and you’ll definitely feel the benefits. Many choose to go onto salads throughout the summer months to lose weight and help get into their bikinis and swimming costumes ahead of their summer holidays, while others just do it to stay cool and have something light for lunch. Whatever your reason for having a salad, try these great summer recipes:

Summer Garden Salad with Trout Fillets
This great option is the kind of thing you could even prepare using ingredients grown in your garden – if you’re a vegetable grower of course! (Although you will have to buy in the trout, obviously!)

Made using beetroot, radish, celery, spring onions and a mixture of leaves with sliced trout throughout you get some amazing refreshing flavours.

Sweet Potato Salad
Sweet potatoes, red onion, spring onions, some chives, some olive oil and a dash of honey to add some flavour – dead simple but absolutely amazing! This salad takes about half an hour to prepare, mainly through cooking the potatoes so it’s the ideal lunch to make the night before, perhaps while you’re cooking your dinner – two birds with one stone!

Chicken, Rice and Lentil Salad
Of course, if you haven’t got the ingredients then you can’t make a salad. The same is true if you’re running late in the morning. Don’t do your usual thing and go to the fast-food place round the corner, try our chicken, rice and lentil salad which is packed full of flavour and far healthier. With beans, peas, peppers, salad leaves and a soy and sweet chilli dressing it’s one of our top sellers and great for eating outdoors in the hot weather.
