Blogger of the Month: Veggie Runners

For our May Blogger of the Month, we’ve chosen to feature the Veggie Runners. We love vegetarian and vegan food here at URBAN Eat, that’s why we created our all our exciting vegetarian food to go range.

Veggie Runners is an award-winning blog full of fitness tips and great vegetarian and vegan recipes. Its creators, mother and daughter, Janey and Bibi, are marathon runners and fit, fun foodies. If you’re looking for motivation on how to be healthy inside and out, Veggie Runners is a great place to start. We spoke with Bibi to find out a bit more about the running duo.

1.What inspired you to start your blog?

When mum was planning a really long run along the West Highland Way in Scotland (96 miles!), she struggled to find exciting vegan and vegetarian recipes online for active lifestyles. We both love cooking as much as we love running so we spotted a gap and the blog was born.

2.Where do you find inspiration for recipes?

We’re adventurous eaters, which helps, and we love to experiment with new ingredients too. We love food from around the world like Keralan, Mexican and Thai and find it exciting to work out how to convert existing recipes to become plant-based.

3.What is your favourite recipe in your blog and why?

This is like choosing a favourite child! (Luckily I’m mum’s only child so I know I must be her favourite…) The one we come back to time & time again is our tahini-miso dressing, that can be used on everything from stir-fries to salads. Another favourite meal is our Porcini and Cashew Nut Roast, which goes down a treat every Christmas.

4.What would be your dream destination regarding food?

Anywhere in Asia would be gorgeous – we love aromatic, complex flavours and often meat isn’t the centre of the plate in Asian cuisines. We’d love to go to Thailand and take a cookery course, eating loads of fresh lovely veggie food – preferably on a beach in flip-flops…

5.What is your most spectacular kitchen fail?

They say that cooking is an art and baking is a science. If that’s the case, we definitely tend towards the artistic! We can make cakes, just about, but let’s just say our savoury dishes are generally more appealing. That said, our Vegan Cherry Chocolate Tiffin is the most popular post on the blog so we’re not totally hopeless at sweet treats.

6.What’s your favourite part about being Vegetarian?

There are so many benefits – we’re healthy and usually full of energy. We also love knowing that we’re doing our bit for the planet, as a veggie diet is much more sustainable in terms of water, carbon and land usage. We can’t change the world but we can do our little bit.
