URBAN eat Blog of the Month: Belleau Kitchen

This month we have a treat for you!  Please say a big welcome to Dominic who is the master chef behind Belleau Kitchen.  Not only is he a brilliant cook, but he is also a regular contributor for Lincolnshire Life Magazine and Good Taste Magazine as well as a creator of Simply Eggcellent blogger link up.

We are very excited to share Dominic’s story with you so here are the answers from the man himself!

1. What inspired you to start your blog?

I watched the brilliant Julie and Julia film about a food blogger who cooks from the brilliant Julia Childs cookbook and that night I started Belleau Kitchen.  I’ve always enjoyed cooking and writing but I’d never really thought of a blog until that point.

2. Where do you find inspiration for recipes?

My mum has always been a massive inspiration for me as we grew up with food always at the heart of the family and mum is a great cook so I’ve grown up with her recipes, many of which I share on my blog.  I love the internet for recipes and gorgeous pictures which inspire me and cook books… I have hundreds of cookbooks! Most importantly I am inspired by where I live and the seasons.  I am surrounded by farms and producers and fresh ingredients.

3. What is your favourite recipe in your blog and why?

I love chicken thighs and try and make a chicken thigh dish at least once a month.  They are the most versatile meat.  They have to be skin on and bone in as they taste the best.  They are inexpensive and so packed with flavour and can take a lot of cooking so you can slow roast them with loads of vegetables in one dish and it’s so easy.  I make a wonderful oven-roasted chicken thigh risotto which is superb for large gatherings.

4. What would be your dream destination regarding food?

This is a bit of a cop-out but I’d like to travel the world on a journey of food exploration.  I love food from all over the world but I’d like to experience real street food, not the fancy restaurants.

5. What is your most spectacular kitchen fail?

This is a tricky one because I don’t have one massive fail that I can say ‘oh that’s the one’ but I make mistakes in the kitchen all the time.  I am very impatient and so tend to throw things together.  8 times out of 10 they work but sometimes there are little things that come out quite badly.  I can’t do fancy icing for instance because I just don’t have the patience for neat work!
