Who needs an excuse for a BBQ? You do! Here at URBAN eat, we love an excuse for amazing food. With any luck this blog will bring on the sunshine so you can experiment and play with our tasty BBQ recipes for food that you wouldn’t find at any old get together.
*Please note, all food mentioned in this blog may be greatly improved by good company and a cold beer.
1. Beef or Pork Burgers
Finely chop a green onion and combine in a bowl with a splash of fish sauce, a teaspoon of grated ginger, ½ teaspoon sesame seed oil, some finely chopped chilli, a whole egg and some beef or pork mince. Fry up a taster to try and season more if not up to taste. Then form your patties, leave to chill for an hour and cook on the BBQ until it turns into a beautiful burger. Best served in a brioche bun with some Asian style slaw too.
Mix up a tablespoon of each of these: Turmeric; ginger and garlic paste; cumin and chilli powder with a pinch of salt and rub all over some tasty cod or trout. Try and leave overnight if possible and grill up the next day. Best served up with a splash of fresh lemon juice for that added zing!
Grab two large mushrooms, de-stump and add a generous lump of butter into where the stump once was. Add a chopped up clove of garlic to each and sprinkle on some chopped parsley for added flavour. Wrap up individually in foil and grill until juicy and delicious. Best served in a crisp ciabatta with some mozzarella and a little bit of pesto.
Dice one red and one yellow pepper, a red onion and a pack of feta and place in an aluminium tray. Add about 2-3cm depth of oil and grill until the feta melts and peppers go soft. Best served as a side that punches a flavour.
5. Chicken Fajitas
Juice 2 limes, and add a tablespoon of: oregano; cumin; smoked paprika; mild chilli powder and olive oil to a bowl and add some diced chicken breast. If possible, leave to marinate over night and use metal skewers to grill your chicken on the BBQ. Best served with soft tortilla wraps, lettuce, fresh toms, cheese, sour cream and a dollop of guacamole.
6. Chocolate Bananas
For dessert, keep your bananas in their skins and slice a line down the centre. Stuff with chocolate buttons or chopped up Mars Bars and wrap in foil and grill on the BBQ for about 20 mins or until chocolate has fully melted. Best served up hot with ice cream or squirty cream… yum!
